Why is the wastewater department so strict on the rules? Don’t these people have a conscience?

I’m helping to build a mock restaurant that will be used to teach mentally and physically handicap people how to work in a restaurant. The kitchen will be fully functional with all equipment and serving counter and dining area but will only be open to the public 1 day a week just to help pay the rent. The rest of the time we will be training these people how to do a job. There will be a program to place them in a job when they are ready. Our sticking point is the grease trap. Waste water is making us install a full scale grease trap even though the kitchen is only for training purposes and will generate very little waste. We already signed a lease and started the renovations but now have to come up with K more dollars to pay for this grease trap. I explained to them that this is non-profit and is to help these people find a job so they can function normally in society but they said they don’t care… they would not grant us exception to the code. Don’t they care?

    They can’t just go making exceptions for people, no matter what the noble reason. It’s not about caring, it’s about doing their jobs.

    This reminds me of the guy who tried to bust a baseball team with a child labor law infraction, for having a bat boy.
    This kid absolutely loved his ‘job’.
    When it went to court, the judge called the accuser an idiot, in essence.
    Try to contest it, or seek an exemption of some kind.
    You might get lucky.

    That’s such a great thing to do, you must feel great about it.
    As for the wastewater dept, can you imagine what would happen if they gave an exception to 1 person? Eventually they would be granting exceptions to everyone who has a story.

    They represent the government and our government is supposed to keep our environment safe for us. Yes, they have a conscience. They are preventing your restaurant from dumping grease down the drain. If you want to open a restaurant, even for 1 day a week, you need to abide by the rules. It would be something good to teach your employees about as well. Don’t be mad at the city for not letting grease get dumped into the water supply.

    The problem is the "open to the public one day a week." You now fall under "all" codes that are followed by public food handlers. You might as well open up 6 to 7 days a week now that you have some money to make up. Other wise don’t open to the public at all. Sorry, but good luck.
